Recipe

Ramen Goat Backstrap | 15-30 minutes

Squirrel Stew

Ingredients:

  • 2-3 squirrels, quartered

  • 4 cups chicken stock or water

  • 2 carrots, chopped

  • 2 potatoes, cubed

  • 1 onion, chopped

  • 2 cloves garlic, minced

  • Salt, pepper, bay leaf, thyme

Instructions:

  1. In a large pot, brown squirrel pieces in a bit of oil.

  2. Add onion and garlic, sauté until soft.

  3. Pour in stock, add herbs and simmer for 1.5–2 hours, until meat is tender.

  4. Add carrots and potatoes, simmer another 30-40 minutes.

  5. Season to taste. Serve with crusty bread.
