Recipe

Moose Heart Soup | 60-90 minutes

Ingredients:

  • 1 moose heart, cleaned and diced

  • 1 large onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 2–3 potatoes, peeled and diced

  • 3 cloves garlic, minced

  • 6 cups beef or wild game broth

  • 2 tbsp oil or butter

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried thyme

  • 1 bay leaf

Directions:

  1. Prep the heart: Trim off any fat, valves, and connective tissue. Rinse well and dice into bite-sized pieces.

  2. Sear the meat: In a large pot, heat oil or butter over medium-high. Brown the moose heart pieces for about 5 minutes.

  3. Sauté aromatics: Add onions, garlic, carrots, and celery. Cook until softened (about 5 minutes).

  4. Add broth and potatoes: Pour in broth, add potatoes, thyme, bay leaf, salt, and pepper.

  5. Simmer: Cover and simmer for 45–60 minutes or until the heart is tender and the veggies are cooked through.

  6. Taste & serve: Remove the bay leaf, adjust seasoning, and serve hot with bread or bannock.
