Recipe
Elk Meatball Bowls
Prep: 15 Minutes | Cook: 25 Minutes | Servings: 4 People
Ingredients:
1 lb Ground Elk
1 Egg
1/4 Cup Breadcrumbs (or almond flour for low-carb)
1 tsp Onion Powder
1/2 tsp Garlic Powder
1/2 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Smoked Paprika
1 tbsp Olive Oil (or Elk Tallow)
For the Bowl:
2 Cups Cooked White Rice, Brown Rice, or Mashed Potatoes
1 Cup Sauteed Greens (Spinach or Kale)
1/2 Cup Roasted Sweet Potatoes or Carrots (Optional)
Directions:
Make the Meatball
In a bowl, mix ground elk, egg, breadcrumbs, and seasonings. Roll into 1.5-inch meatballs (makes about 12-15)
Cook
Heat oil in a skillet over medium heat. Add meatballs and cook for 8-10 minutes, turning until browned and cooked through.
Build the Bowls
Add a scoop of rice or mash to each bowl, top with meatballs, sauteed greens, and any roasted veggies.
Optional Toppings
Drizzle with a little BBQ sause, Greek yogurt sause, or hot honey if you want a kick.
