Recipe

Elk Meatball Bowls

Prep: 15 Minutes | Cook: 25 Minutes | Servings: 4 People

Ingredients:

  • 1 lb Ground Elk

  • 1 Egg

  • 1/4 Cup Breadcrumbs (or almond flour for low-carb)

  • 1 tsp Onion Powder

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Salt

  • 1/2 tsp Black Pepper

  • 1/2 tsp Smoked Paprika

  • 1 tbsp Olive Oil (or Elk Tallow)

For the Bowl:

  • 2 Cups Cooked White Rice, Brown Rice, or Mashed Potatoes

  • 1 Cup Sauteed Greens (Spinach or Kale)

  • 1/2 Cup Roasted Sweet Potatoes or Carrots (Optional)

Directions:

  1. Make the Meatball

    • In a bowl, mix ground elk, egg, breadcrumbs, and seasonings. Roll into 1.5-inch meatballs (makes about 12-15)

  2. Cook

    • Heat oil in a skillet over medium heat. Add meatballs and cook for 8-10 minutes, turning until browned and cooked through.

  3. Build the Bowls

    • Add a scoop of rice or mash to each bowl, top with meatballs, sauteed greens, and any roasted veggies.

  4. Optional Toppings

    • Drizzle with a little BBQ sause, Greek yogurt sause, or hot honey if you want a kick.
